Black Bean Tacos

For Beans:

1 can black beans
½ packet taco seasoning (or about 1 ½ Tbs)
1 cup water
Salt and pepper, to taste

I use this method for making homemade corn tortillas.

Optional Toppings:

Onion, diced
Fresh Corn
Avocado, sliced or diced
Sour cream

  • If making homemade tortillas, prepare them first and set aside to steam. For store bought tortillas, lightly toast on both sides and set aside.
  • Put black beans, taco seasoning, and water; stir together and bring to a boil, then simmer on low until beans have absorbed most of the liquid.
  • While beans are cooking, prepare other ingredients.
  • Layer toppings on tortilla and serve.
