Breakfast Blueberry Collagen Smoothie

As a kid, I was not a fan of breakfast. Then I began having Migraine headaches in middle school, and my Pediatrician who also suffered from Migraines said that I could not skip breakfast. Trying to help me overcome my breakfast aversion, she said I could eat anything that sounded good to me. Doc said that skipping breakfast was like trying to start a car without first filling up on gas.

Today I am not only pro breaking fast, but also an advocate for healthy breakfasts. If you’re like I was, struggling to stomach something early in the day, then a smoothie is an excellent option. If you’re into breakfast, you’ll love this fruity frappé. Unlike many high-sugar smoothies that lack protein — which exacerbate my headaches — I love Savory Lotus‘ delicious blueberry liquid breakfast laced with protein, peptides, and healthy fat.

This smoothie is basically a tall drink of anti-aging matter.

Blueberries contain one of the highest antioxidant levels of all common fruits and veggies and are high in nutrients but low in calories. Ten proven health benefits of blueberries can be found on Healthline here.

I originally avoided jumping on what I considered the “collagen bandwagon”; but, after reading more about the numerous health benefits, I began to implement it in my diet have been pleased with how I feel. In short, collagen helps “support skin health and vitality, and might also help promote other areas of health, such as bone, joint, [gut] and heart health” according to Medical News Today. I use this brand of collagen powder.

This shake gets a fiber boost from the Chia seeds, which contain a ginormous 11 grams per ounce. One of the top plant-based sources of protein, Chia are high in antioxidants, calcium, and other essential minerals. By slowing down food digestion, these seeds can help regulate blood sugar levels. Chia helps you feel full quicker and longer due to water absorption and expansion in the stomach. Feeling full longer can prevent snacking, and help with weight loss.

But the real bonus is that this blueberry collagen smoothie has a delightful flavor.

Breakfast Blueberry Collagen Smoothie

Yields:  1–2 servings |  Prep time: 5 min | Recipe by: Katja Heino

  • 1 cup blueberries
  • 1/2 frozen banana OR 1/2 cup of steamed & frozen cauliflower (adds surprisingly creamy texture)
  • 1/2 ripe avocado
  • 1 tbsp almond butter
  • 2 scoops of collagen powder (20 grams of collagen)
  • 1 1/2 cups milk of any kind OR water (I use THIS)
  • 1 cup ice (optional, but I prefer cold smoothies)
  • 1 tbsp chia seeds*

*How and when you add the chia seeds will affect the texture of your smoothie. Read more here.

Add all ingredients into a blender. Blend until smooth.  

Drink. Enjoy. Be well!
